Nettle Soup: The perfectly healthy Spring-time pick-me-up

What you need:
Foraged nettle tops – about 2 gloved handfuls should be enough
1 onion
1 clove garlic
Couple of potatoes – peeled and chopped
Chunk of butter
Vegetable stock
What to do:
- Chop up the onion and the garlic clove – doesn’t need to be finely as you are going to blitz the soup at the end.
- Gently soften the onion and garlic in the butter in a saucepan.
- Add the potatoes and nettle tops and stir to coat with the butter.
- Add the stock.
- Bring to the boil briefly then let simmer for about 20 minutes – long enough to soften the potato.
- When cool enough, blitz the soup, ideally with a hand blender.
- You can add cream, salt, pepper just before serving if you want.
- Serve with some nice home-made bread and enjoy!
