I like to experiment in the kitchen as well as the garden so the other day I thought I would try making the kefir cheese I’ve heard about.
I got my tools together:
bowl/jug, funnel, muslin



I put the funnel in the jug I had and lined it with the muslin which I had soaked in boiling water to clean it. Then I poured a quantity of dairy kefir into the funnel.

I then put a towel over it and left it overnight on the kitchen counter – didn’t do anything else to it!

The next day I emptied the contents of the muslin into a tub:

The kefir solidifies and you are left with whey in the jug.
The next step was to add flavouring. I put in a little sprinkle of salt and some dried ground up chilli peppers (just a little). Then put it in a nice little dish to serve.

I was a little hesitant because I do find milk kefir a bit tangy and I need to mix it with other flavours, but I got a cracker out the cupboard and went for it.
You know what? It was tangy with just a hint of spice and I really liked it!
