It seemed like a good idea at the time
I haven’t made a Christmas cake in years. In fact, I don’t know if I’ve ever made more than one and the first one was a disaster.
So as I was scrolling through YouTube videos the other day, I came across a channel which does a lot of videos about baking on a budget. Lot’s of great ideas on there and the latest one was how to make a Christmas Cake.
It looked much simpler than other versions I’ve seen (no offence Delia Smith), so I thought I’d give it a go.
I made it last night and I was very pleased with myself, especially as Dearest Son had actually come into the kitchen to get involved with the process. In fact, we were having such a nice time chatting away, I got distracted (not like me I know), and instead of pouring half of the 100ml brandy into the cake mix, I poured in the whole lot! The fruit seemed to soak it in fine though so I’m keeping my fingers crossed all turns out ok.
I’ll admit, the kitchen was smelling pretty good last night and my cake is currently all wrapped up and in a box to mature. You’re supposed to feed it a little brandy once a week for a month but I don’t think I need to put any more in it! I’ll wait a while though and will put marzipan on the top before we eat it. Also thinking about skipping the icing part since none of us really like it. So marzipan and a few Christmas characters could be just the thing.
Of course, in all the excitement, I forgot to take a photograph to show you the end result but I’ll try to take a snap when the munching moment arrives. Anyone else made a cake this year?
